Oriental Summer Salad

Oriental Summer Salad

Ingredients:

1 small head romaine lettuce (about 6 cups, thinly sliced to 1/4-inch thick)
6 scallions thinly sliced
1/2 cup roasted peanuts

6-ounce can medium shrimp (or fresh-grilled shrimp)
6 ounces thinly sliced snow peas
1 large red bell pepper thinly sliced
3-ounce can mandarin oranges
Asian salad dressing
Sesame Breton or Vinta Crackers

Preparation:

Toss first 7 ingredients together and drizzle salad with dressing. Serve on individual plates. Top each salad with approximately three crushed crackers. Serve crackers on the side. Makes about 6 individual salads.

Helpful hints:

Display the ingredients in separate bowls and let your guests mix and match. Use chopsticks instead of forks for extra flair.
