Apple Currant Chutney
Ingredients:
2 apples, diced
1/4 cup currants
2 teaspoons butter
1 shallot or onion, diced
1 tablespoon lemon juice (optional)
1/2 tablespoon cinnamon
1 teaspoon nutmeg
1/2 cup red wine vinegar
1/4 cup brown sugar

Preparation:
Cook shallots (or onions) in two teaspoons of butter until translucent. Add the diced apples, currants, brown sugar, vinegar, lemon juice (optional) and spices. Simmer over low heat until liquid is reduced by half. Cool. Serve with Breton Crackers.
Helpful hints:
Spread crackers with goat cheese and then dollop with chutney.
